Ingredients

  • 1/2 cup of butter (room temp)
  • 1 1/4 cup of sugar
  • 2 eggs (room temp)
  • 1 teaspoon baking soda
  • 1.5 cups of flour
  • 1 teaspoon of vanilla
  • 1/4 cup plain yogurt
  • 1/4 teaspoon of salt
  • 1 cup of mashed bananas

Equipment. 9x5 inch loaf tin

Method

  1. Preheat the oven to 350
  2. Cream the butter and sugar
  3. Dissolve the baking soda in the yogurt
  4. Add the egg to the cream mixture
  5. Combine the cream mixture, the yogurt mix and the vanilla
  6. Combine the flour and salt
  7. Add the dry ingredients and the mashed bananas
  8. Bake for 45-50 mins

How long does it really take?

In a 9x5 tin a loaf this size usually wants 50 to 60 minutes at 350F. A narrower 8.5x4.5 tin runs 10 to 15 minutes longer again and can sink in the middle.

Treat 45 minutes as the earliest it could be done. If the top is colouring fast at 40 minutes, tent it with foil and keep going.

How do you tell when it is done?

Put a skewer through the centre. It should come out with a few dry crumbs and no wet batter.

Grease and line the tin first. Leave the loaf in the tin for 10 minutes before turning it out, or it tears along the bottom.
