Spinach and Feta Puff Pastry, a slice of spinach and cheese quiche on a plate

  • Makes 20 to 24 pieces, serves 8 as a starter

Ingredients

  • 1 clove of garlic
  • 10 ounce packet frozen spinach
  • 4 ounce package crumbled feta
  • 1 pack of puff pastry, 450g / 1 lb, thawed
  • 1 large egg, beaten
  • 1 tablespoon milk
  • 2 tablespoons sesame seeds

Method

  1. Preheat the oven to 400F
  2. Thaw and drain the spinach
  3. Cook the garlic until fragrant, then add the spinach and cook for 3 to 5 minutes
  4. Transfer to a bowl
  5. Mix in the feta cheese
  6. Cut the pastry into long rectangles
  7. Fill the middle with the spinach mix
  8. Brush the edges with egg wash
  9. Roll the pastry to seal it
  10. Brush with egg wash, then sprinkle with sesame seeds
  11. Cut into pieces
  12. Bake for 20 to 25 minutes

Is there enough feta for the spinach?

Yes. Four ounces of feta against ten ounces of spinach sits at the lean end of the range, but it works.

Squeeze the thawed spinach hard before it goes in. Wet filling makes soggy pastry.
